This simple roasted broccoli is baked with zesty lemon and aromatic garlic until tender then served with a creamy watercress sauce.

Ingredients

  • 2 tablespoon olive oil
  • 2 servings (per tablespoon) keto watercress sauce
  • 3 cup broccoli
  • 1 clove garlic
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the broccoli into florets of even sizes and arrange across a shallow oven tray. Thinly slice the garlic and scatter over the broccoli along with the lemon zest, salt and pepper. Drizzle with the olive oil and lemon juice.
  3. Transfer to the oven to bake for 18-20 minutes, turning halfway through until fork tender and golden at the edges.
  4. Toss the broccoli with the watercress sauce to serve.
