This is a great grab and go snack to have in the fridge.

Ingredients

  • 6 slice – 6" long bacon
  • 1 ½ tablespoon maple flavored syrup by lakanto
  • 1 tablespoon cocoa powder, unsweetened
  • ⅓ cup coconut oil
  • ¼ cup pecans, raw

Instructions

  1. Heat the oven to 375 degrees Fahrenheit and line a shallow oven tray with foil. Arrange the bacon across the oven tray and bake for 20 minutes until crisp.
  2. Whilst the bacon is cooking you can prepare the pecans. Finely chop the pecans and add to a small pan along with 1/2 tablespoon of lakanto syrup. Stir well to combine and toast for 2-3 minutes over a low heat until warm and fragrant. Set aside to cool.
  3. Remove the bacon from the oven and blot off any excess fat, allow to cool.
  4. Whilst the bacon is cooling add the coconut oil, cocoa powder and remaining lakanto to a food processor, blend until you have a smooth chocolate sauce.
  5. Cut the cooled bacon strips in half across the middle and dip each one into the chocolate sauce so that it is covered halfway, then sprinkle with the maple pecans, pressing them into the chocolate.
  6. Transfer the bacon to the fridge for 20 minutes to set the chocolate before serving.
