This tasty snack or meal prep breakfast is all your favorite parts of a lox and cream cheese bagel, just without the bagel. Two lox and cream cheese rolls are nesting with grape tomatoes and fresh cucumber. A hard boiled egg rounds out the meal! You can stack your sliced ingredients together or enjoy the finger foods individually.

Ingredients

  • 6 grape grape tomato
  • 6 slice cucumber
  • 1 ounce lox
  • 1 ounce cream cheese
  • 1 large raw egg

Instructions

  1. In a meal prep container, arrange 6 grape tomatoes and 6 slices of cucumber.
  2. Prepare 2 lox and cream cheese rolls by slicing a 1 ounce piece of lox in half. Then, spread about ½ ounce of cream cheese across each piece of lox (you can soften the cream cheese first if necessary).
  3. Roll each piece of lox up and set the 2 rolls in the meal prep container. Next, hard boil an egg for 12 minutes. Allow the egg to cool before peeling and slicing into 6 slices.
  4. Set the hard boiled egg slices in your meal prep container and enjoy or store for later! You can garnish your salmon with dill or another herb if you wish.
