Except you may wish to substitute for coconut amino acids if you are Paleo.

Do I have to toast the Keto bread slices?

That is up to you! For this recipe, the bread was not toasted. If you want to toast the bread for extra flavor, feel free to layer Keto bread slices with butter or mayo and then toast them on both sides on low for several minutes in a small saute pan until browned. Since low carb bread does not contain gluten, it will not brown as quickly, so the heat will need to be low and slow.

How can I add extra fats to this appetizer?

The slices of toast can be slathered with mayo (like Japanese Kewpie mayo) and then topped with the rest of the ingredients.

Ingredients

  • 2 servings keto loaf bread
  • 2 ounce smoked salmon
  • 2 tablespoon, sliced cucumber
  • 6 large strip – 3" long carrots
  • 1 teaspoon black capelin caviar by season
  • 1 1 tsp. prepared wasabi, s&b brand

Instructions

  1. Begin by slicing your Keto bread. Decide if you want to toast the bread or not. If you want to toast it, slather each slice on both sides with butter or mayo. You can use homemade bread or store bought Keto bread for this. If you use homemade bread, be sure to cut the bread very thin so it is easy to eat (this should be about 1 oz per slice).
  2. Place it into a preheated saute pan over low heat. Cook for several minutes on both sides until golden brown and delicious.
  3. On top of the bread slices place smoked salmon, cucumber slices (cut on a mandolin so they are very fine), carrot strips (which are made from using a vegetable peeler) and a small dollop of black caviar. Serve the toasts with wasabi to dip your toast into.
  4. Feel free to top the toast with any other Keto-friendly toppings like fatty condiments or avocado. Here the toast is topped with the cucumber, smoked salmon, thinly sliced cucumber, caviar and carrot strips. You could also put the wasabi directly on the toast instead of on the side.
