These light and refreshing stuffed cucumbers are loaded with salmon in a zesty avocado mayonnaise.
One cucumber cup makes a great snack in between meals, or you can enjoy two halves served as a lunch portion.
Ingredients
- ½ large – 8 1/4" long cucumber
- 2 ounce canned salmon
- ½ tablespoon mayonnaise
- ½ each avocado
- 1 tablespoon dill weed, fresh
- 1 teaspoon lemon juice, fresh
- ¼ teaspoon salt, sea salt
Instructions
- Slice the cucumber into 4 even segments. Taking a sharp knife score around the center of the cucumber and scoop out the seeds, being careful not to cut all the way through the cucumber.
- Add the avocado, mayonnaise, dill, lemon juice, salmon, salt and pepper to a mixing bowl. Mash together to combine, forming a chunky paste.
- To serve, divide the salmon mixture evenly between the hollow cucumber cups.
