This is a delicious breakfast item or dessert! The recipe utilizes the Keto Artisan Sourdough loaf, which is diced and then soaked in a cinnamon custard then baked to perfection.
Ingredients
- 10 slices keto artisan "sourdough" loaf
- 3 large raw egg
- 1 cup original coconut milk unsweetened by silk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ cup brown sugar replacement by swerve
- 2 tablespoon butter
- ⅛ teaspoon coarse kosher salt by morton
Instructions
- Preheat an oven to 350 F. Dice the sourdough loaf into a large dice. Place into a greased 8” x 8” pan.
- Whisk the eggs, coconut milk, vanilla extract, cinnamon, salt and Swerve brown sugar together.
- Pour melted butter over the bread and then the custard mixture.
- Bake for 45 minutes or until bread pudding is nicely browned on top.
