This is a delicious breakfast item or dessert! The recipe utilizes the Keto Artisan Sourdough loaf, which is diced and then soaked in a cinnamon custard then baked to perfection.

Ingredients

  • 10 slices keto artisan "sourdough" loaf
  • 3 large raw egg
  • 1 cup original coconut milk unsweetened by silk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ cup brown sugar replacement by swerve
  • 2 tablespoon butter
  • ⅛ teaspoon coarse kosher salt by morton

Instructions

  1. Preheat an oven to 350 F. Dice the sourdough loaf into a large dice. Place into a greased 8” x 8” pan.
  2. Whisk the eggs, coconut milk, vanilla extract, cinnamon, salt and Swerve brown sugar together.
  3. Pour melted butter over the bread and then the custard mixture.
  4. Bake for 45 minutes or until bread pudding is nicely browned on top.
