These keto breakfast quiches are loaded with oozy mozzarella, tender baby spinach, heavy cream, egg and encased in salty Serrano ham and baked until golden.

These make a great breakfast/brunch option!

Ingredients

  • 6 slice serrano ham slices by sainsbury's
  • 3 tablespoon, grated mozzarella cheese
  • 2 medium raw egg
  • 1 clove garlic
  • ½ cup heavy cream
  • ½ cup baby spinach
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Line 6 muffin tray cups each with a slice of Serrano ham. Mold the ham into the cups so that it covers the sides and base.
  3. Sprinkle a half tablespoon of grated mozzarella into the base of each ham lined cup.
  4. Crack the eggs into a bowl and add the heavy cream and spinach. Crush the garlic and add to the bowl along with the salt and pepper. Beat together well to combine.
  5. Divide the egg mixture evenly between the ham cups.
  6. Transfer to the oven to bake for 18-20 minutes or until golden and cooked through.
