These keto breakfast quiches are loaded with oozy mozzarella, tender baby spinach, heavy cream, egg and encased in salty Serrano ham and baked until golden.
These make a great breakfast/brunch option!
Ingredients
- 6 slice serrano ham slices by sainsbury's
- 3 tablespoon, grated mozzarella cheese
- 2 medium raw egg
- 1 clove garlic
- ½ cup heavy cream
- ½ cup baby spinach
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Line 6 muffin tray cups each with a slice of Serrano ham. Mold the ham into the cups so that it covers the sides and base.
- Sprinkle a half tablespoon of grated mozzarella into the base of each ham lined cup.
- Crack the eggs into a bowl and add the heavy cream and spinach. Crush the garlic and add to the bowl along with the salt and pepper. Beat together well to combine.
- Divide the egg mixture evenly between the ham cups.
- Transfer to the oven to bake for 18-20 minutes or until golden and cooked through.
