The entire skillet is baked and then topped with freshly sliced red onion, pickled capers, fresh dill, and everything bagel seasoning. You will not even miss the bagels! The final baked dish is topped with smoked salmon. The creaminess from the sour cream, the saltiness from the smoked salmon and capers, along with the spiciness from red onions, puts this dish over the top!

Can I make this dish ahead of time?

You can prep this dish ahead of time, but you should bake it right before serving. Feel free to place the eggs and sour cream into the skillet and prep the toppings so they are ready to go. When you are prepared to serve, place the skillet into the oven and top it with the fresh toppings post bake.

Can I use something other than sour cream?

Yes, feel free to use mascarpone cheese or creme fraiche instead!

How can I add more fats to this dish?

Feel free to add more oil to the initial step or avocado on the side.

Ingredients

  • 1 teaspoon olive oil
  • 6 large raw egg
  • 6 tablespoon sour cream
  • ¼ teaspoon coarse kosher salt
  • 2 tablespoon, sliced red onion
  • 2 teaspoon capers
  • 1 tablespoon dill weed, fresh
  • 4 g everything bagel seasoning

Instructions

  1. Preheat an oven to 350 F. Add the olive oil to a medium-sized nonstick skillet.
  2. Spread the oil around to coat the pan. Crack the eggs into the pan.
  3. Dollop the sour cream around the eggs evenly and salt the top with ¼ tsp kosher salt. Top with asparagus that has been trimmed of their woody ends. Place the skillet into the oven for 10-12 minutes or until the egg whites are set. The yolks should still jiggly as they will continue to cook as the pan exits the oven.
  4. While the eggs are cooking, slice the red onion into thin slices, drain the capers, chop the dill and have the bagel seasoning ready. When the skillet comes out of the oven, immediately top it with all the toppings. Serve immediately.
