This quick and easy scramble is loaded with protein from eggs, pancetta and tuna and tossed with aromatic basil to serve.
This makes a great keto breakfast or brunch served on its own or with keto toast.
Ingredients
- 2 ounce tuna
- 2 large raw egg
- 1 ½ ounce diced pancetta by waitrose
- 1 tablespoon basil, fresh
- ½ tablespoon olive oil
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat and add the pancetta. Cook through until golden.
- Whilst the pancetta cooks, crack the eggs into a mixing bowl and flake in the tuna. Season with pepper and beat together to combine.
- Pour the beaten egg mixture into the skillet and leave to settle, then scramble with a wooden spoon until cooked through. Roughly chop the basil into the eggs and stir through to serve.
