This simple roasted chicken is smothered in a spiced tahini sauce to create a flavorsome and succulent chicken.

Perfect served with cauliflower cous cous or roasted vegetables.

Ingredients

  • 2 ¾ pound chicken, whole, skin eaten
  • 2 clove garlic
  • 2 tablespoon tahini
  • 2 teaspoon lemon juice
  • 2 teaspoon cumin, ground
  • 1 teaspoon spices coriander seed or ground
  • ½ tablespoon olive oil
  • ½ tablespoon maple flavored syrup by lakanto
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Mince the garlic and add to a mixing bowl with the tahini, lemon juice, cumin, coriander, olive oil, syrup, salt and pepper. Mix well to combine.
  3. Liberally coat the chicken in the tahini mixture.
  4. Transfer to the oven to roast for 1 hour 30 or until completely cooked through and the juices run clear.
