This simple but tasty slaw is loaded with crunchy cabbage, crisp lettuce, salty bacon and aromatic chives.

This is a great addition to any keto salad or sandwich!

Ingredients

  • 4 slice – 6" long bacon
  • 2 teaspoon, cut pieces chives, raw
  • 2 teaspoon lemon juice
  • 1 ½ tablespoon mayonnaise
  • 1 tablespoon olive oil
  • ½ cup cabbage
  • ½ cup iceberg lettuce
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking until crisp and golden. Set aside to cool completely.
  2. Whilst the bacon cools, thinly slice the lettuce and cabbage and add to a mixing bowl.
  3. Add the bacon to the bowl with the cabbage and lettuce.
  4. Finely chop the chives and add them to a small mixing bowl with the mayonnaise, lemon juice, salt and pepper. Stir well to combine.
  5. Spoon the mayonnaise over the bacon and vegetables and stir well to combine, coating everything in the dressing. Keep refrigerated until ready to serve.
