This simple but tasty slaw is loaded with crunchy cabbage, crisp lettuce, salty bacon and aromatic chives.
This is a great addition to any keto salad or sandwich!
Ingredients
- 4 slice – 6" long bacon
- 2 teaspoon, cut pieces chives, raw
- 2 teaspoon lemon juice
- 1 ½ tablespoon mayonnaise
- 1 tablespoon olive oil
- ½ cup cabbage
- ½ cup iceberg lettuce
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking until crisp and golden. Set aside to cool completely.
- Whilst the bacon cools, thinly slice the lettuce and cabbage and add to a mixing bowl.
- Add the bacon to the bowl with the cabbage and lettuce.
- Finely chop the chives and add them to a small mixing bowl with the mayonnaise, lemon juice, salt and pepper. Stir well to combine.
- Spoon the mayonnaise over the bacon and vegetables and stir well to combine, coating everything in the dressing. Keep refrigerated until ready to serve.
