This keto compound butter is packed with flavor from aromatic herbs and sweet cranberries.

This butter is perfect for basting the holiday turkey or adding extra flavor to roasted chicken.

Ingredients

  • 1 teaspoon rosemary, fresh
  • 1 teaspoon, chopped thyme, fresh
  • 1 teaspoon sage leaves-fresh
  • 1 tablespoon, whole pieces cranberries, dried (craisins)
  • 1 teaspoon lemon peel or zest raw
  • ½ cup unsalted butter
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the butter to a mixing bowl and bring to room temperature. Mash to soften.
  2. Finely chop the fresh herbs and cranberries and add to the bowl with the butter, lemon zest, salt and pepper. Mix together well to combine.
  3. Spoon the butter onto a sheet of plastic wrap and roll into a tight log shape, twisting the ends to secure.
  4. Transfer to the fridge to firm until ready to serve.
