While you are preparing your main course, you can easily prepare this batch of homemade roasted tomato sauce on the side. Toss it with your zucchini noodles, ladle over a chicken breast, or bake your low-carb veggies in it.

Ingredients

  • 10 ounce grape tomato
  • 1 tablespoon olive oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • 1 clove garlic
  • ⅛ teaspoon onion powder
  • 4 leaf basil

Instructions

  1. Preheat an oven to 375 degrees. In a small glass baking dish, arrange the grape tomatoes. Drizzle the olive oil and sprinkle the salt and pepper over the tomatoes. Crush whole garlic cloves and wedge them in the dish as well.
  2. Bake the dish for 50 minutes, uncovered. The tomatoes will be a mix of bursted and unbursted with a strong garlic smell.
  3. Combine the roasted tomatoes and garlic in a food processor with the remaining ingredients. The original recipe here makes about 1 cup tomato sauce.
