This crisp and sweet cabbage salad is tossed with tender red onion, crunchy pine nuts, aromatic mint and tangy goats cheese, coated in a lemon maple dressing.

This is a great side salad to serve with grilled or roasted meats.

Ingredients

  • 2 cup red cabbage
  • 2 tablespoon goat cheese, soft
  • 1 ½ tablespoon olive oil
  • 1 tablespoon peppermint, fresh
  • 1 tablespoon, whole pieces pine nuts
  • 1 teaspoon maple flavored syrup by lakanto
  • ½ small red onion
  • ½ tablespoon lemon juice
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the pine nuts to a dry skillet over a medium heat and toast gently for 3-4 minutes until lightly golden.
  2. Thinly slice the cabbage and onion and add to a large serving bowl. Roughly tear the mint leaves and add to the bowl. Toss to combine.
  3. Whisk together the olive oil, lakanto syrup, lemon juice, salt and pepper.
  4. Crumble the goats cheese into the bowl and scatter over the toasted pine nuts. Toss to combine.
  5. Drizzle over the dressing, stir to coat and serve.
