Salsa verde is a great keto friendly dressing, packed with healthy fats and loaded with flavor.
Perfect for topping roasted vegetables, salads or grilled meats – we have used this recipe for our keto griddled lamb chops and salsa verde.
Ingredients
- 3 anchovies anchovies canned in oil and drained
- 2 clove garlic
- 1 ½ cup, chopped parsley, fresh
- 1 tablespoon, whole pieces capers
- 1 tablespoon lemon juice
- ½ cup, whole pieces basil
- ½ cup peppermint, fresh
- ⅓ cup olive oil
Instructions
- Add the parsley, basil, mint, garlic, anchovies and capers to a food processor. Pulse to roughly chop.
- Add the lemon juice and olive oil and blend until you have a chunky paste. Serve as a dressing to meats or vegetables.
