Salsa verde is a great keto friendly dressing, packed with healthy fats and loaded with flavor.

Perfect for topping roasted vegetables, salads or grilled meats – we have used this recipe for our keto griddled lamb chops and salsa verde.

Ingredients

  • 3 anchovies anchovies canned in oil and drained
  • 2 clove garlic
  • 1 ½ cup, chopped parsley, fresh
  • 1 tablespoon, whole pieces capers
  • 1 tablespoon lemon juice
  • ½ cup, whole pieces basil
  • ½ cup peppermint, fresh
  • ⅓ cup olive oil

Instructions

  1. Add the parsley, basil, mint, garlic, anchovies and capers to a food processor. Pulse to roughly chop.
  2. Add the lemon juice and olive oil and blend until you have a chunky paste. Serve as a dressing to meats or vegetables.
