This simple bok choy is stir fried with aromatic garlic, citrusy lemon and smoky sesame until tender and lightly golden.

This makes a great side to an Asian inspired main. Perfect with chicken, pork, fish or tofu!

Ingredients

  • 1 ¼ cup bok choy
  • 1 tablespoon coconut oil
  • 1 clove garlic, fresh
  • 1 teaspoon sesame oil
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • ½ teaspoon, whole pieces sesame seeds
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Carefully slice the tough base from the bottom of the Bok choy and separate all the individual leaves. Chop the white stalks and separate from the green leaves. Reserve the leaves to one side. Thinly slice the garlic. Heat the coconut oil in a skillet over a medium heat and add the bok choy stalks and garlic. Pan fry gently for 3-4 minutes or until the bok choy is tender and lightly golden.
  2. Add the leaves, lemon juice, zest, sesame oil, sesame seeds, salt and pepper. Stir well to combine and cook until the leaves are wilted. Serve hot.
