These flavorsome green beans are spiced with the heat of fresh ginger and cooked with aromatic seasonings.
These make a great side to Asian inspired main dishes – perfect with pork or fish.
Ingredients
- 9 ounce green beans (string beans), raw
- 2 tablespoon cilantro
- 1 ½ slice – 1" diameter ginger root, raw
- 1 tablespoon olive oil
- 1 clove garlic
- 1 large scallions
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
- Whilst the beans are cooking, crush the garlic, finely grate the ginger and thinly slice the scallion. Heat the olive oil in a skillet over a low/medium heat and add the ginger and garlic. Sweat gently for a minute or two until tender.
- Add the green beans to the pan with a pinch of salt and pepper and stir well to coat in the ginger and garlic. Cook for a minute or two more until hot through.
- Roughly chop the cilantro and stir through the beans to serve.
