This simple roasted cauliflower is coated in an earthy tahini dressing with aromatic spices.

These golden florets make a great accompaniment to a roasted chicken or griddled lamb chops.

Ingredients

  • 2 tablespoon tahini
  • 2 teaspoon cumin, ground
  • 2 teaspoon lemon juice
  • 1 medium – head – 5" to 6" diameter cauliflower
  • 1 teaspoon spices coriander seed or ground
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Cut the cauliflower into florets and transfer to a mixing bowl.
  3. Add the tahini, oil, lemon juice, herbs and spices to a small mixing bowl and stir well to combine.
  4. Drizzle the tahini mixture over the cauliflower and toss to combine, coating the cauliflower in the marinade.
  5. Arrange the cauliflower across the lined shallow oven tray and transfer to the oven for 18-20 minutes or until tender and golden, turning halfway through.
