Ingredients

  • 12 ounce zucchini
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ teaspoon garlic, powder
  • ¼ teaspoon onion powder
  • 1 teaspoon thyme, dried
  • 1 tablespoon butter, unsalted
  • 3 ounce spinach

Instructions

  1. Chop your zucchini into quarter pieces. Toss the pieces in a bowl with the olive oil and all seasonings. Pour the contents into a pan over medium heat and cook while occasionally stirring until the zucchini is tender and lightly browned.
  2. Turn your stove heat to low and melt the butter into the pan. When all the zucchini is coated, add chopped spinach on top of the zucchini. Stir slowly as the spinach wilts and mixes into the pan. Cook the spinach down to your preference – as wilted or fresh as you like!
