These keto prawn cocktail bites utilizes jumbo shrimp in a Cajun inspired spiced mayonnaise.

Ingredients

  • 12 shrimp jumbo shrimp by publix
  • 4 leaf, inner romaine lettuce
  • 2 teaspoon lemon juice raw
  • 1 tablespoon parsley
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • ½ teaspoon tomato puree
  • ½ teaspoon garlic powder
  • ½ teaspoon spices onion powder
  • ½ cup mayonnaise
  • ¼ teaspoon cayenne pepper
  • ¼ tsp, leaves spices thyme dried
  • 0.2 teaspoon salt
  • â…› teaspoon black pepper

Instructions

  1. Arrange the lettuce leaves and top each leaf with three jumbo shrimp.
  2. Add the mayonnaise, lemon juice, tomato puree, paprika, garlic powder, onion powder, cayenne pepper, thyme, salt and pepper to a mixing bowl. Stir well to combine.
  3. Top each of the shrimp filled leaves with 2-3 heaped teaspoons of the mayonnaise.
  4. Sprinkle with a little paprika and scatter with fresh chopped parsley to serve.
