Deli-style turkey slices are layered with cream cheese, cheddar, bacon, mustard, lettuce, and cucumber. It tastes just like a club sandwich without wheat toast. The serving size is just one pinwheel piece, so add as many as you’d like to your food log. Include just two or three pinwheels for an easy Keto snack you can grab from the refrigerator, or include four or more pinwheels in your food log for a meal-sized portion. Store the prepared club sandwich pinwheels in a refrigerator for up to 3 days to stay fresh.

Choosing The Right Deli Slices For The Recipe

Slices of deli-style turkey breast act as the outside “wrap” of the pinwheels. This means you need to choose slices of turkey that appear to have good integrity. Avoid thin slices, and ask for thick-sliced portions at a deli counter if you need to. Avoid slices that have tears or holes in the flesh because they will likely tear more once you try to roll the slices around the ingredients. Slicing the pinwheels with a sharp knife will also help keep the pieces together. Use toothpicks if necessary.

Other Keto Ingredients To Add

There are many additional Keto ingredients you can add to the pinwheels for more fat and flavor. A spread of mayonnaise along with the cream cheese will add more fat macros and tang to the recipe. You can also substitute some of the ingredients with other alternatives. Turkey can be substituted with deli-style slices of ham, chicken, or roast beef. The cheddar may also be substituted with any type of mild sliced cheese.

Ingredients

  • 4 slice – 6" long bacon
  • 1 oz shredded lettuce
  • 1 oz cucumber
  • 4 medium slice – each 1 ounce turkey breast lunchmeat
  • 3 slice (from pre-sliced package) – each 3/4 ounce cheddar cheese
  • 1 oz cream cheese
  • ½ teaspoon mustard

Instructions

  1. Cook bacon strips to your liking, but crispy or well-done strips will be best for the recipe. Leave the bacon strips aside to cool while you also prepare some other ingredients. If you don’t already have pre-shredded lettuce from a bag, shred your lettuce now. Slice the cucumber into julienne slices or thin sticks only about ¼” wide and no more than 2” long. Have these ingredients prepared where you’re making the pinwheels.
  2. Lay two slices of deli turkey on top of each other, lined up evenly. Please read the note about choosing the right style of deli turkey in the recipe introduction for tips. Layer about 1 ½ slices of cheese across the turkey, then spread a ½ ounce of cream cheese across the cheese slices. Layer two strips of bacon over the cheese, then squeeze a ¼ teaspoon of brown mustard horizontally across the closest edge of the turkey slices. On top of the mustard, arrange ½ ounce of shredded lettuce and ½ ounce of julienned cucumber.
  3. Repeat Step 2 to make as many servings as you desire. To roll the pinwheels, start at the edge of the turkey slices that have mustard, lettuce, and cucumber. Fold the turkey, cheese, and bacon over the greens, and continue rolling the turkey up into a tight roll. Tuck the seam of the roll underneath the turkey to seal it. Use a sharp knife to gently slice off the loose ends of each roll, and slice each roll into 4 thick pieces – a little larger than a slice of sushi. Serve chilled.
