In need of a quick snack? Make these easy Hot Salami Cups at the beginning of the week, and you have a yummy appetite-quencher for every day. Each bite tastes like an Italian sub sandwich, minus those pesky carbs. Your keto diet doesn’t have to be tricky!

Ingredients

  • 6 thin slice salami
  • ¾ ounce kalamata olives
  • 1 ounce banana pepper rings by kroger
  • 4 ounce fresh mozzarella cheese

Instructions

  1. Preheat an oven to 375 degrees. Prep six spaces in a muffin tin with pan spray, and set a salami slice in each muffin cup.
  2. Chop the olives and banana pepper rings, and distribute them amongst the salami cups. Chop the mozzarella cheese into small chunks and distribute these as well.
  3. Bake the hot salami cups in the oven for 15 minutes, or until the edges of the salami turn golden brown and the cheese is melted and bubbly. Allow the salami cups to cool slightly before eating.
