Did you know that eating spicy food is beneficial for your gut health and metabolism? Start your morning off right with this spicy omelette, made with hot chorizo sausage and pepperjack cheese. Of course, you can eliminate spice by using a mild chorizo or replacing the pepperjack with a mild cheese.

Ingredients

  • 3 large raw egg
  • ½ tablespoon heavy cream
  • â…› teaspoon salt
  • â…› teaspoon black pepper, ground
  • ¼ teaspoon onion powder
  • 6 ounce chorizo
  • ¼ cup, shredded pepper jack cheese

Instructions

  1. In a small bowl, whisk together the eggs, cream, and all seasonings. Set this beside your stove for later.
  2. In a medium sized skillet over medium heat, cook the chorizo. Use a spatula to break the meat up as it cooks, letting it turn slightly crispy – about 4 or 5 minutes.
  3. Turn the heat down low and slowly pour the egg mixture over the chorizo. Place a lid over the omelette and cook until the egg cooks through and the bottom is lightly brown. Adjust the heat as necessary to promote even cooking and avoid burning.
  4. During the last 30 seconds of cooking, sprinkle the cheese over the omelette. You can use the lid again to help melt the cheese quickly.
  5. Serve with chopped cilantro! You can also expand on this meal by laying sliced avocado in the center and folding the omelette in half, at our discretion.
