Ingredients

  • 1 medium head (5-6 in. dia) cauliflower
  • 1 small red onions
  • 1 tablespoon parmesan cheese
  • 2 tablespoon butter
  • 10 ½ ounce cream cheese
  • ⅔ cup, diced cheddar cheese
  • ⅛ teaspoon spices nutmeg ground
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 390 degrees Fahrenheit.
  2. Place the cauliflower in a large saucepan. Cover with water and bring to a boil. Reduce to a simmer for 7-8 minutes until tender, but not too soft.
  3. Drain the cauliflower and transfer to an oven proof dish.
  4. Heat the butter in a large saucepan over a medium heat and add the onions. Fry gently until soft.
  5. Add the cream cheese and 1/3 cup of grated cheddar to the pan. Stir until melted and fully combined. Stir in the nutmeg and season well.
  6. 6Spoon the cheese sauce over the cooked cauliflower and sprinkle over the remaining grated cheddar and parmesan. Season with a little pepper.
  7. Transfer to the oven to bake for 18-20 minutes until golden and bubbling.
