These chips become so crispy crunchy out of the oven and are filled with notes of caraway, sesame and poppy seeds. Chia seeds are added for extra fiber and color. They pair great with your favorite salsa or guacamole. Mascarpone cheese can be substituted for cream cheese.

Ingredients

  • 1 ½ cup, shredded queso chihuahua (chihuahua cheese)
  • ⅔ cup almond flour
  • 4 tablespoon mascarpone
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup sesame seeds
  • 1 teaspoon caraway seed
  • 1 teaspoon, whole pieces chia seeds
  • 1 teaspoon, whole pieces poppy seeds
  • 1 large raw egg

Instructions

  1. Preheat an oven to 350 F. In a small saucepan, combine the shredded cheese, almond flour, mascarpone cheese, spices and seeds together. Place over medium-low heat and stir constantly until the cheese has melted and turns into a homogenous mixture.
  2. Add the egg and stir well.
  3. Place on a piece of parchment paper and place another piece of parchment paper on top of it. Roll it out to just under ¼” thickness then remove the top parchment paper.
  4. Bake for 30 minutes until golden brown. Then using a pizza cutter or knife, cut into desired shapes and separate shapes so they are not touching.
  5. You may need to use a separate baking sheet. Bake again for a few more minutes until crisp about 5-10 minutes.
